A couple weeks ago my parents brought us a dozen ears of corn for a lunch get together! We each had plenty but there was still a lot left over. So I began the hunt for a recipe to use up some of the left over corn and came across this recipe on my friend Kristin’s blog Whole Living, Whole Health.
I am always looking for new twists on familiar things too so this BBQ version of a pizza seemed like the perfect option!
(1) First I gathered all my ingredients and set them out so that everything would be easy to reach (see below for ingredient list!) (2) I used a pizza stone from The Pampered Chef and since I just got it recently I am still seasoning it. I put some vegetable oil on the bottom to help keep things from sticking. I love using pizza stones, they help keep the crust nice and crispy. If you don’t have one, I highly suggest getting one. (3) I used a store bought pizza dough, so I just rolled it out on the pan. (4) Then instead of pizza sauce I used BBQ sauce! Just use whatever brand or flavor is your favorite. (5) Next I layered the cheese and then moved on to layering the veggies (6 & 7). There is really no certain way you have to do it, just throw things on! (8) Finally add cheese on top and then bake! (9) The results are delicious! Enjoy!
