It’s been kind of an odd summer for me so far. My husband and I were supposed to spend most of June in Alaska, but the day before we were supposed to leave, our trip was postponed. We are hoping to go in August. Since our trip was cancelled, I had all this extra time, so I have been watching my grandkids a couple of days a week and helping a friend with her bed and breakfast while she vacations. It’s been busy, but good busy. My fingers are crossed for August though. I’m tired and need a break. HA! I don’t think there will be much of a break there.
Today I have a recipe for you that will use up those left over mashed potatoes, in case you are like me. You see, I can’t get the hang of cooking for two people to save my life. We almost always have left overs. Now, a lot of times my husband will take them for lunch, although I question if he actually eats them or not. I went to his office a couple of weeks ago because I forgot to send his lunch with him. I put it in his refrigerator and found all of these containers full of food for the past week or two. Needless to say, I was pretty grossed out.
It’s because of this find that when we have left overs, I sometimes try to make something else out of the food. That is how these Loaded Twice Baked Mashed Potatoes came to be. I went searching through my refrigerator and found some things to add that sounded good to me and mixed it all up to see if my tastebuds were right. They were. These potatoes are really, really good and I’m so glad that I made them. I hope you will love them too.
