Let me start out this post by warning you that I'm a meat lover! I'm also a bread and biscuit lover so this recipe really excited me when I sat down to eat it! I'm definitely not a girly girl who's afraid to eat. Nope. Bring it on as far as I'm concerned! My idea of a great meal is a nice juicy piece of meat and soft buttery biscuits. Does it help my waist line? Heck no! Do I still love it anyways? Yep! That's why I try to make healthy choices and cut where I can when cooking. When I saw a bunch of different recipes for Dr. Pepper Pulled Pork and 7UP Biscuits I knew I wanted to try them but didn't want all of the extra calories. That's why I decided to use Dr. Pepper TEN and 7UP TEN instead! They have the same great flavors and work wonders in this recipe!
This is actually a really simple dinner to make and has a great flavor. I picked up everything I needed at my local Smiths (Kroger) Grocery Store: Pork Roast, Barbecue Sauce, Dr. Pepper TEN, 7UP TEN, yellow onion, spices, Bisquick, butter and light sour cream.
I always cook my pork roast on low in the Crock Pot so it doesn't dry out and it stays nice and tender. It takes about 7-8 hours depending on the size. You can also cook it on high if your pressed for time and that will take about 4-5 hours. I always suggest keeping an eye on the liquid level when you cook it on high. You want to make sure you have enough to keep everything cooking correctly. If it gets too low you can always add a little more Dr. Pepper TEN if needed.
Now let's talk about these biscuits. They are my NEW favorite biscuit recipe! I'm not joking. They are seriously the best biscuit we've ever tried. I knew I was going to have to use the 7UP TEN to save come calories because I didn't want to sacrifice and not put butter on them.
You guys know that I always credit where I get a recipe idea from and I'm not joking when I say that I've seen this recipe everywhere! Seriously, if you search on Pinterest it comes up with a ton of blog posts. Same thing with Google. I wouldn't even know who to thank for this buttery, good, soft and fluffy, light and delicious biscuit recipe.
If you haven't tried it yet don't wait like I did. You'll be mad at yourself for waiting. They are so good you guys! Like I'm going to make these every single day and eat them with every single meal kind of good.

Slow Cooker Dr. Pepper TEN Barbecue Pulled Pork with Lightened up 7UP TEN Biscuits

Ingredients
- *SLOW COOKER DR. PEPPER TEN BARBECUE PULLED PORK*
- 1 Pork Roast (pick a size depending on how many people you need to feed)
- 12- oz Dr. Pepper TEN
- ¼ teaspoon ground black pepper
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon chili powder
- ¼ teaspoon cumin
- ¼ teaspoon salt
- ⅛ teaspoon ground red pepper *optional
- 1 small yellow onion (quartered)
- 2 cloves of garlic (minced)
- 1 cup barbecue sauce
- *LIGHTENED UP 7UP BISCUITS*
- 2 cups of Biscquick
- ½ cup light sour cream
- ¼ cup + 2 tablespoons butter
- ½ cup 7UP TEN
DIRECTIONS
- Turn your slow cooker on low
- Cut your onion into 4 large pieces and place in the slow cooker. Mince 2 cloves of garlic and add to the slow cooker as well.
- Remove your pork roast from the package and pat dry. Sprinkle all of your spices on your meat and rub into all sides.
- Put your pork roast and 12-oz of Dr. Pepper TEN in your slow cooker and allow to cook for 7-8 hours or until the meat easily shreds with 2 forks.
- Remove your meat and shred on a plate and set aside.
- Drain the liquid from your slow cooker and reserve about ½ - 1 cup.
- Add your shredded meat, ½ cup reserved liquid and 1 cup barbecue sauce back to the slow cooker and stir well. Cover and let cook for an additional 20 minutes while you prepare your biscuits.
- *Lightened Up 7UP TEN Biscuits*
- Preheat your oven to 450°
- Add 2 cups of Bisquick to a large mixing bowl along with ½ cup of light sour cream. Stir together. Add your 7UP TEN and stir well. Mixture will be sticky.
- Melt ¼ cup butter and place in the bottom of an 8x8 glass baking dish and set aside.
- Add a little bit of Bisquick to a flat surface (I used a cookie sheet) and spread out your biscuit mixture and press down until it is about the size of your 8x8 glass baking dish and 1 inch thick. You can cut your biscuits into round or square shapes and then place them into your baking dish or you can leave it as one big piece and cut after they are cooked. They are good either way!
- Cook in the oven for about 8 minutes. While they are cooking melt your remaining butter and drizzle over the tops of the biscuits. Continue to cook for an additional 4-6 minutes or until they are a golden buttery color on the top.
- Remove from the oven and serve with your barbecue pulled pork and enjoy!

NOTES: I know some people don't love a really strong barbecue flavor on their meat so adjust the amount of barbecue sauce that you add if needed. My hubby was good with only ¼ cup and I added more after he pulled his out!
