Ingredients

  • 1-8.8 ounce package of Uncle Ben's® Ready Rice® Whole Grain Brown
  • ¼ teaspoon salt
  • 1 tablespoon lime juice
  • 2 tablespoons fresh cilantro
  • Tyson® Fully Cooked Refrigerated Grilled Chicken Breast Strips
  • tortillas
  • butter
  • black beans
  • corn
  • pepper jack cheese
  • fresh pico de gallo cherry tomatoes, red onion, jalapeno, cilantro, lime juice, salt
  • avocado

Instructions

  1. Make rice according to package directions.
  2. Transfer to a bowl and add salt, cilantro and lime juice. Toss to combine.
  3. Preheat a skillet over medium heat and saute chicken until warm and brown.

  4. Remove chicken and melt a tablespoon of butter in the pan. Reduce to medium-low heat.
  5. Assemble burritos by sprinkling cheese over the whole tortilla. Place your favorite mix-ins in the middle of the tortillas. Top with more cheese.
  6. Tuck in the sides and then fold the burrito over, placing extra cheese along the “seam” of the burrito.
  7. Place the burrito seam side down onto the skillet and cook for 1-2 minutes until the burrito has browned and the cheese has melted. Flip over and cook the other side for 1-2 minutes.
  8. Remove and let cool slightly before serving.
