This cheesecake in a jar is a yummy, single-serving dessert. It has a smooth cheesecake layer, a crispy graham cracker bottom, and tasty fruit on top. It's great for snacking and enjoying by yourself.
Combine the graham cracker crumbs, butter, and granulated sugar in a medium mixing bowl. Divide the crumb mixture into the bottom of the six jars and gently press the mixture into an even layer.
Beat the cream cheese, confectioners’ sugar, and vanilla extract until it’s soft and creamy with your mixer on medium-high speed.
Whip the heavy cream with your mixer on high speed in a large bowl until you get soft peaks.
Fold the whipped cream into the cream cheese mixture.
Place the cream cheese filling into a piping bag and pipe the mixture into the jars.
Top each jar with a few tablespoons of the cherry pie filling.
Notes
You can turn graham crackers into fine crumbs by either using a food processor or a blender. If you don't have those, you can also put them in a freezer bag and crush them with a rolling pin. You can find graham crackers at the grocery store in the baking section.
If you don't have mason jars, you can use any glassware you like for this cheesecake recipe. I've even used stemless wine glasses for a fancy presentation.
Make sure your cream cheese is at room temperature. This way, your cheesecake filling won't have lumps in it.
To put the mixture into the jars neatly, you can spoon it in carefully. If you have a piping bag, you can use it to fill the jars without making a mess, and it will come out evenly.
