Lightly butter bread and put one slice in the pan, butter side down. Add cheese.
Allow the cheese to melt slightly and spoon on the sloppy joe meat. Top with cheese and another slice of bread, butter side up.
Carefully flip the sandwich and cook for an additional 2-3 minutes or until the bread is golden brown.

It was easier to flip the sandwich when the cheese was slightly melted. It keeps the sloppy Joe mixture from spilling out too much.This would be a great use of leftover sloppy Joe meat!I used mild cheddar cheese but you could use your favorite.Slather that bread in butter, if you wish, but maybe try out this trick: mayo. Mayonnaise has a higher smoking point than butter and creates a lovely toasty bread just like butter, but perhaps with a little more grace if you don’t flip it fast enough.
