Air fryer carrots are a quick and healthy side dish, perfectly crispy and ready in just 15 minutes. Their natural sweetness and simple seasoning make them a delicious addition to any meal.
Add the sliced carrots to either a medium-sized mixing bowl or a gallon-size ziplock bag.
Add the extra virgin olive oil to the bowl or ziplock bag. Stir or shake to coat the carrots completely.
Remove the air fryer basket and generously spray with non aerosol non-stick cooking spray or olive oil or avocado oil spray. Preheat the air fryer to 400°F (about 3 to 4 minutes).
Add the sliced and coated carrots halves in a single layer. You will need to cook in batches depending on the size of your air fryer basket. Sprinkle with ½ teaspoon Italian seasoning, ½ teaspoon kosher salt, and ¼ teaspoon fresh cracked black pepper.
Place the basket back into the air fryer and cook for 8 minutes. Carefully remove the basket and shake the carrots to turn them. (You can also stir the carrots with a wooden spoon) Replace the basket and cook for another 3 to 4 minutes until the carrots are nicely browned but not burnt. Remove the carrots.
Add the remaining carrots and seasoning. Cook as directed above. Garnish with the shaved parmesan cheese and fresh chopped parsley. Serve while warm.

Make sure to check your air fryer manual for cooking time guidelines for your specific model, as times and temperatures vary depending on the type of air fryer you have.
We’d recommend a Ziploc bag to coat your carrots since that creates fewer dishes!
Aerosol sprays like Pam have been reported to damage the coating on the air fryer basket, so it is not recommended to use aerosol sprays in air fryers.
You can use aerosol olive oil or avocado oil without a problem or non-aerosol olive oil.
