Place the chicken legs/quarters on the cookie sheet.
Coat each chicken quarter with olive oil, about ½ tablespoon per chicken quarter/leg.
Sprinkle the seasoning evenly in a thin layer over the chicken on both sides.
Place the chicken open side up, which means the top of the chicken leg with skin on the cookie sheet.
Bake in the preheated oven for 20 minutes.
Flip the chicken quarters over and cook for an additional 15-20 minutes or until the internal temperature reaches 175°F.
Cool for 1-2 minutes on the pan.
