You will need a microwave-safe, 12-ounce coffee mug.
Add the all-purpose flour, granulated sugar, baking powder, and a pinch of salt to the mug. Stir using a dinner fork or mini whisk.
Add the whole milk, melted unsalted butter, and vanilla extract to the mug of dry ingredients.
Whisk all the ingredients together until you do not have any big pockets of dry ingredients. You may need to use a small rubber spatula to scrape the sides and bottom of the mug to ensure that all the flour has been absorbed by the liquids.
Microwave your pancake in a mug for 1 minute and 30 seconds.
When your pancake is warm, top it with maple syrup and fresh berries.
Notes
If you are serving more than one person, you can assemble all your ingredients in each mug and then microwave them one at a time. Because this is such a quick and easy recipe, you can make a pancake in a mug for the whole family.
We found that a shorter and wider, cappuccino-style mug worked well for this fluffy pancake recipe.
Do not overmix this batter. A few tiny little lumps are okay, just like a standard pancake batter, and will not alter your final pancake. If you overmix the batter, it will yield a tough and dense pancake in a mug.
This recipe’s cook time is based on using a 1000-watt microwave oven. The cook time may vary if your microwave is a different wattage.
