Creamy Tomato Tortellini are an easy to make skillet dinner your family will fall in love with. The perfect combination of tortellini, tomato sauce, seasonings, spinach, and cheese, this is sure to be a new family favorite.
This skillet dinner recipe is perfect for busy weeknights, weekends when you have friends over, or anytime you want a creamy delicious family friendly pasta recipe for dinner.
WHAT INGREDIENTS DO YOU NEED TO MAKE CREAMY TOMATO TORTELLINI
You’ll be surprised to see just how basic and easy this recipe is. Fresh refrigerated cheese tortellini really make this creamy cheesy dish a kid favorite and mom approved dinner.
Start to finish, dinner will be on the table in less than 30 minutes!
Here’s what you’ll need to get started:
- cheese tortellini, fresh tortellini in the refrigerated section
- Italian stewed diced tomatoes, I used the sliced roma style with Oregano & Basil
- fresh spinach, chopped
- salt
- ground black pepper
- onion powder
- garlic salt
- Italian seasoning
- garlic, minced
- milk
- heavy cream
- flour
- Parmesan cheese, grated
- mozzarella cheese, shredded
INGREDIENT SUBSTITUTIONS AND ADDITIONS
TORTELLINI: While cheese tortellini are my top pick for this recipe you can really use any pasta you have on hand. Penne, rotini, or even cheese filled ravioli would make a perfect substitution.
CANNED TOMATOES: The best pick for this recipe would be Italian Stewed Tomatoes with Basil and Garlic. If you don't already have that in your pantry, or can't find it at the store any stewed tomatoes will do. Just add an extra ½ tsp basil, oregano, and garlic to the recipe.
HEAVY CREAM: If calories and fat content are a concern I suggest using half and half in this recipe. It will still make it creamy enough while keeping the fat and calories more in check.
CHEESE: Fresh Parmesan grated right from the wedge is preferred, but bagged will work too. If you don't have Parmesan cheese, Asiago would be a good substitution. HOW TO ASSEMBLE THIS MINI CHICKEN POT PIE RECIPE
HOW TO ASSEMBLE THIS CREAMY TOMATO TORTELLINI
FIRST STEP: Prepare tortellini per package directions. Drain and set aside.
SECOND STEP: In a medium mixing bowl combine your milk, heavy cream and flour. Whisk together and set aside.
THIRD STEP: In a large skillet combine the diced tomatoes (with sauce), minced garlic, spinach, salt, pepper, onion powder, garlic salt, and Italian seasoning. Heat over medium heat until mixtures just begins to boil.
FOURTH STEP: Once mixture is begins to boil add the milk, cream & flour mixture and stir well. Add your grated Parmesan cheese and cook until bubbling again.
FIFTH STEP: Reduce heat and simmer for about 2-3 minutes allowing the sauce to thicken.
SIXTH STEP: Add the cooked tortellini to the sauce mixture and stir to fully coat in all of your saucy goodness.
