It's the perfect tie into the better eating choices I'm making this January.
Ingredients for Kale Salad
For this meal, you'll only need a handful of ingredients to create your kale quinoa salad to serve alongside your Well Yes! Sipping Soups.
For the salad, we'll be using:
- 8 cups chopped Kale
- 1 cup grape tomatoes, sliced lengthwise
- ½ English cucumber (about 1 cup), chopped
- 1 roasted red pepper, chopped (about ⅓ cup)
- ½ cup cooked quinoa
- ½ cup crumbled feta cheese
For the dressing, we'll be using:
- ¼ cup olive oil
- ¼ cup red wine vinegar
- 1 T sugar
- 1 T dried oregano
- 1 T minced garlic
- ¼ t salt
I won't lie -- when making this, I totally snacked on some feta cheese. I think I ate just as much as I actually put in the salad! So good!!
How to Make a Kale Salad
This kale salad recipe is so easy! Once you've gathered your ingredients, you'll combine for a fast and delicious meal.
Combine salad ingredients in a large bowl.
Once your dressing it made, you'll want to immediately dress the salad and toss to combine.
Let the salad sit for about 15 minutes, toss to combine, and serve cold.
How to Make Kale Salad Dressing
Combine dressing ingredients in a small bowl. Whisk together until well combined. You can also add the ingredients to a jar that has a lid and shake to combine.

What Goes with a Kale Salad?
