Are you looking for a great, quick homemade lunch that is both wholesome and yummy? We've got you covered with this easy and delicious kale salad! It's a fresh, healthy salad that is a good option for those busy days. Served cold with an amazing homemade dressing, it's the best.
This tasty lunch is made even better when served alongside nutritious Well Yes! Sipping Soups. This is a go-to lunch for our family and I'm sure it will be for yours as well.
It's January -- the season of all things fresh and new! With the holidays behind us, our family is getting back into the swing of things.
I'm a list maker and goal oriented kind of gal. Few things make me as happy as a fresh to do list and a mapped out vision of my goals.
Over the holiday break, I spent quite a bit of time organizing my thoughts and goals for the coming year. My little OCD heart is so happy!
I'm hitting the ground running now: I've got menu plans created, budget targets and more. The more I have a plan in the place, the easier it is for me to stay on track. Especially on those inevitable busy or emotional days where it's hard to catch a breath.
After weeks of eating carelessly, I'm totally ready to focus on healthful, homemade meals that are budget-friendly and taste delicious.
Even though we had a relaxed holiday break, January is already ramping up to be extra busy. We're back to evenings of homework, extracurriculars, and DIY projects aplenty.
But thankfully, I've got my plan in place so I'm not sweating it.
One of my secret weapons to eating great and saving my sanity is the delicious Well Yes! Sipping Soups I've recently discovered. What are they? Let me tell you!
The Well Yes! Sipping Soups are at an on-the-go soup that comes in five incredible flavors: Roasted Red Pepper & Tomato, Butternut Squash & Sweet Potato, Harvest Carrot & Ginger, Sweet Corn & Roasted Poblano and Tomato & Sweet Basil. Each one is non-GMO, 170 calories or less and have no artificial colors or flavors.
One of the reasons I love these Well Yes! Sipping Soups is how versatile they are.
They make an excellent snack option on a busy day while I'm running out the door. I can also sip one while working at my desk. Even when I'm swamped, they are easy to carry and sip as I go since no spoon or bowl are needed.
They are ready in two minutes after a quick microwave.
These nutritious soups are also a perfect complement to any meal since they have delicious veggies inside -- 20% or more of your daily vegetable servings actually! They have vegan and vegetarian options, so there is something for everyone. The possibilities are endless for meal pairings with great combinations like that!
Not only are they a go-to snack for me, but I've also added the Well Yes! Sipping Soups to our lunch menu several times in January. When paired with a simple sandwich or salad, you can't beat how easy it is to get lunch on the table.
The kale salad I'm sharing with you today is another family favorite. It's so fresh and yummy, we all love it.
What is Kale Salad?
Kale is related to broccoli, cauliflower, and cabbage and offers fiber, antioxidants, calcium, and vitamin K making it a great addition to your diet. I love serving this nutrient-rich leaf in smoothies and salads. It's awesome when topped with a simple, homemade dressing and served cold!
It's the perfect tie into the better eating choices I'm making this January.

For this meal, you'll only need a handful of ingredients to create your kale quinoa salad to serve alongside your Well Yes! Sipping Soups.
For the salad, we'll be using:

- 1 cup grape tomatoes, sliced lengthwise
- ½ English cucumber (about 1 cup), chopped
- 1 roasted red pepper, chopped (about ⅓ cup)

I won't lie -- when making this, I totally snacked on some feta cheese. I think I ate just as much as I actually put in the salad! So good!!
