In a small bowl, combine salt, pepper, and garlic powder. Whisk together. Season both sides of each pork chop with the entire mixture.
In a medium mixing bowl, combine honey, chicken broth, rice wine vinegar, soy sauce, and cayenne pepper. Whisk together and set aside.
In a non-stick skillet over medium heat, add olive oil and butter. Add pork chops and sear until browned. Flip the pork chops over and sear the other side.
Once both sides are seared, add the garlic to the pan and let cook for 30 to 45 seconds. Add the honey mixture to the skillet and move the pork chops around in the pan to coat in sauce on both sides.
Let the sauce simmer until it reduces and turns a nice amber color. This takes about 15 minutes. Turn pork chops over every 5 minutes while the sauce is cooking.
When the pork chops reach about 155°F when tested with a meat thermometer, then turn up the temperature of the burner to medium heat and bring the sauce to a fast rolling boil until it finishes reducing and is thicker.
Garnish the pork chops with fresh parsley and serve.
Notes
Searing will lock in all the juiciness of the meat, so make sure not to skip this step.
It takes 15 to 20 minutes for the sauce to reduce. Give it time and let it simmer until it is just about done. Then turn up the heat to finish it.
The cooking time for your pork chops will vary depending on how thick they are. Use a meat thermometer to check that they are cooked through.
