I am all about quick and easy meals lately. Back in the day I would make delicious meals from scratch that our whole family loved. Now that we have 2 little boys (ages 2 years and 6 months) we’re lucky if we even get dinner some days. It’s all about them. They are into everything like you wouldn’t believe. Our 2 year old gets into things he’s not supposed to, climbs on all the furniture and is like a tornado when he plays with toys. We love him, but boy is he busy.
Trust me, I always have good intentions of making dinner but sometimes I just need to fix something that is really quick and easy since my husband and I are usually starving to death. One day I’ll look back and remember the days that I was so busy that I didn’t even have time to cook dinner and then I’ll probably miss it so I’d better just enjoy every second of this while I can. My boys won’t be little forever.

For those of you who follow us you know that I’m definitely a meat eater. I love steak, chicken, hamburger and just about everything I can get my hands on. I say that because I don’t want you to be shocked when I tell you that I made this as a “meatless” dish. I know, gasp.
Here’s the honest and simple truth. I’m addicted to Morning Star Farms food. I love it. My daughter loves it. My very picky 2 year old loves it too. We buy their breakfast veggie patties in bulk from Costco (ok, stop laughing) and seriously search out sales at our local grocery stores for their chicken nuggets because they are that good!
With all of that being said I know some of you don’t like meatless meals because you are true carnivores… I totally get it. That’s why I did my research and found a really yummy recipe from our good blogger friend Tastes of Lizzy T. You can sub our awesome meatless Buffalo Chicken Nuggets for her really yummy looking Homemade Buffalo Chicken Nuggets recipe. She’s a great cook so I know they are fantastic!
Once you’ve decided on which Buffalo Chicken Nuggets that you’re going to use it’s really simple. Grab your lettuce, colby cheese, your cooked buffalo nuggets, an avocado and your ranch dressing. You can either do chunks of avocado in your wrap or blend your ranch and avocado together like we did. I like to hide the good stuff in my food so I don’t get any complaints from my kids 😉
That’s it. Dinner is on the table in 15 minutes or less with this meal and I LOVE it!

- 10 Morning Star Farms Buffalo Chicken nuggets (or use the Tastes of Lizzy T recipe link in the post)
- 1 cup lettuce
- 2 tortillas
- 1/2 colby cheese
- 1/4 cup ranch dressing
- 1 avocado
- Cook your Buffalo Chicken Nuggets and allow to cool just a bit so that they don’t wilt your lettuce when you place them in your wrap.
- Grab your tortilla and add lettuce, colby cheese, buffalo chicken nuggets, and avocado.
- Drizzle your ranch dressing over the top and roll tightly.
- Serve to hungry people who like good and spicy food!
