Blondies
Table of Contents
Soft, buttery, and chewy, Blondies are a simple cookie bar recipe with a mild butterscotch flavor. More than just a ‘blond brownie’, Blondies mix up fast, and with no shaping or scooping, are one of the easiest dessert recipes you can make.
The next time you need dessert in a hurry, whip up a batch of Blondies and have them in the oven in 5 minutes.
Dessert bars, like blondies, are so easy to make, even easier than a batch of cookies. You can make them ahead, they’re portable, and they are perfect for a crowd. It’s why brownies are such a favorite.
The main difference between blondies and brownies is, of course, the chocolate. Classic Brownie recipes, Frosted Brownies, and Easy Homemade Brownie recipes are all good chocolatey choices.
Blondies Ingredients
- Butter
- Brown sugar
- Granulated sugar
- Egg
- Vanilla extract
- All-purpose flour
- Salt
- Semi-sweet chocolate chips
Made without cocoa powder, Blondies are vanilla-based, and the brown sugar and butter give them a buttery caramel flavor. Made with just eight simple ingredients like flour, brown sugar, butter, and eggs, you'll always have the pantry staples on hand to make this dessert.
Melting the butter ahead of time makes this Blondie recipe one that can be made in one bowl. This recipe throws in some semi-sweet chocolate chips for a sweet addition. Serve your Blondies warm with a scoop of some homemade ice cream on top or enjoy them with a cup of spiced iced coffee.
How to Make Blondies
FIRST STEP: Preheat oven to 350 degrees. Brush an 8-inch square baking pan with melted butter; line pan with parchment paper, leaving a 2-inch overhang on two sides. Also, butter paper.
SECOND STEP: In a large bowl, whisk room temperature butter and sugars until smooth. Whisk in egg and vanilla until fully incorporated.
THIRD STEP: Add flour and salt; mix just until moistened (do not over mix).

FOURTH STEP: Fold in ½ cup semi-sweet chocolate chips.
FIFTH STEP: Transfer batter to prepared pan; pour and smooth top. Sprinkle with remaining chocolate chips.
SIXTH STEP: Bake until top is golden brown and a toothpick inserted into the center comes out clean, between 40 to 45 minutes.
SEVENTH STEP: Set pan on a wire rack, and let cool completely. Using parchment overhang, lift cake from pan, and transfer to a cutting board; cut into 16 squares.
Cooking Tips
You may use dark brown sugar or light brown sugar.
A toothpick inserted in the center should come out mostly clean when cooked. If the middle feels soft, it will firm up as they cool.
Swap the chocolate chips for butterscotch, peanut butter, or white chocolate for a different flavor.
Add chopped nuts, coconut, or orange zest.
Serve warm with a scoop of vanilla ice cream.
