Everyone loves a stack of pancakes for breakfast, and these Disney Pumpkin Pancakes are full of your favorite fall flavors!
Tall and fluffy, these pancakes are deliciously spiced with pumpkin, cinnamon, ginger, and nutmeg.
The leaves are changing colors, the weather is cooler, and I’m stocking up on canned pumpkin to make fall themed recipes.

Of course, pumpkin pancakes are perfect drizzled in maple syrup, but you can really amp up the fall flavor by serving them with a caramel pecan topping. Pour yourself a cup of coffee and you’ll have a delicious and cozy fall breakfast.
Disney Pumpkin Pancakes Ingredients
- Whole milk
- Egg
- Butter
- Canned pumpkin
- Vanilla extract
- All-purpose flour
- Sugar
- Baking powder
- Cinnamon
- Ginger
- Nutmeg
- Salt
- Ground cloves
With the arrival of brisk fall mornings, I picked up a few more cans of pumpkin puree to make this Disney pumpkin pancakes recipe, straight from the breakfast menu at Kona Cafe in Disney World’s Polynesian Village Resort.
While these pumpkin pancakes are only available through October 31st at the resort, you’ll be able to make them at home year round thanks to scaled down version of the restaurant's classic recipe.
How to Make Disney Pumpkin Pancakes
FIRST STEP: Combine milk, egg, melted butter, pumpkin, and vanilla extract in a small bowl. Set aside.
SECOND STEP: Whisk flour, sugar, baking powder, cinnamon, ginger, nutmeg, salt, and cloves in a medium bowl. Fold wet ingredients into flour mixture.
THIRD STEP: Heat a large non-stick skillet or griddle over medium heat until hot. Add ¼ cup scoops of pancake batter onto the griddle. Cook for 3 minutes on each side, until golden brown.
Cooking Tips
Whisk dry ingredients to prevent lumps.
For fluffy pancakes don’t over-mix the batter.
Butter the griddle immediately before adding the batter.
Keep pancakes warm in a 200 degree oven on a wire rack or a cookie sheet.

Storing this Recipe
- Allow pancakes to cool completely before storing.
- Stack the pancakes with a piece of wax paper in between in each pancake.
- Store pancakes in the refrigerator or freezer.
