This easy hashbrown casserole is savory and delicious and makes the perfect side dish for just about any meal.
It isn’t just a dish that goes well with dinner! It’s a very versatile casserole and can even be served with breakfast. Personally, I like to serve this dish as a meal on its own as a breakfast hashbrown casserole! Paired with eggs and bacon, it’s my go-to for a quick and filling start to our day.
Everyone loves it. Each time I make it for breakfast, for a family gathering, or just as a side dish, it is gone in a matter of minutes.
My family takes a vacation together every summer and we do a potluck during the week that we are all together.
A few years back I started bringing this hashbrown casserole as my dish to pass.
Now, it’s not even a question. I have to bring it.
My family expects it, and if I don’t bring it, let’s just say they wouldn’t be too happy with me!
The best part is, it doesn’t get much easier to throw a dish together than this casserole.
You simply put all the ingredients together sprinkle the cornflakes on top and bake it. So easy.
There have been so many times when I’ve thrown it together quickly in the morning or right before a gathering!
There are so many different recipes out there for various kinds of hashbrown casserole. But, in my opinion, this one is simply the best. It is so creamy and tasty!

HASHBROWN CASSEROLE INGREDIENTS
These are the ingredients you will need to make your hashbrown casserole.
- 1 package of hash browns (frozen)
- 1 can of cream of chicken soup
- 1 container of sour cream
- 1 cup of shredded cheddar cheese
- 1 tsp corn flakes (or breadcrumbs)
- 2 tbsp butter (melted)
HOW TO MAKE HASHBROWN CASSEROLE
This is one of the quickest and easiest casseroles to throw together! You don’t even have to wait for the hashbrowns to thaw, you’ll use them frozen! Follow these few steps to make this amazing dish!
First, you will want to preheat the oven to 350 degrees F.
Next, in a 9x13 pan, mix together the frozen hash browns, cream of chicken soup, sour cream, and shredded cheddar cheese. After it is mixed thoroughly, you will want to flatten in out so that it’s evenly spread in the pan.
Top the mixture with the crushed corn flakes. You can also use breadcrumbs if preferred. Melt the butter, then drizzle the butter over the top of the casserole. Try to evenly pour the butter on the entire casserole.
Bake the casserole for 1 hour, leaving the pan uncovered while baking.
Serve immediately after taking the casserole out of the oven.
HOW LONG TO BAKE HASHBROWN CASSEROLE
This casserole takes one hour to bake. You do not have to do any pre-baking of any ingredients. Simply mix everything together and bake it as one.
WHAT TO SERVE WITH HASHBROWN CASSEROLE
The better question is what not to serve this amazing dish with! These cheesy potatoes go perfect with just about any dish. Whether it’s for a potluck, a gathering, or a family get together, they are everyone’s favorite dish.
I love to have this casserole in the summer when we are grilling out. The cheesy, potato flavor goes great with burgers, hot dogs, or steak fresh off the grill.
When I serve this as a breakfast dish, I tend to pair it with eggs, bacon or sausage, and toast. It really completes the homemade breakfast!
TOPPINGS TO ADD TO HASHBROWN CASSEROLE
If you’re serving your hashbrown casserole more as a main dish of its own, you may want to add a few items to it to make it a bit heartier of a meal. Here are some ideas for things you can add.
I have tried it with diced ham before and it’s amazing.
I have also added ground sausage. Just the simple addition of meat makes it feel like a more complete meal.
Either of these options is great for breakfast! Whip up some scrambled or fried eggs on the side and you’ve got the easiest complete breakfast ever!
HOW TO STORE HASHBROWN CASSEROLE
When I make my hashbrown casserole I usually make it in a pan that comes with or has a lid that goes with it. That way I can just pop the lid on and store it in the fridge.
When reheating the casserole it’s easiest to microwave it. Sometimes, the potatoes can get a bit dry. If that’s the case, try adding a bit more sour cream to them to give them some moisture back.
I do have to say that I typically do not have to worry about storing this dish!
Almost every single time I make it, the entire pan gets eaten! They are just so good.
Actually, when we are going to big gatherings, I tend to make two pans!

Hashbrown Casserole
Ingredients
- 1 package of hash browns frozen
- 1 can of cream of chicken soup
- 1 container of sour cream
- 1 cup of shredded cheddar cheese
- 1 cup corn flakes or breadcrumbs
- 2 tbsp butter melted
Instructions
- Preheat oven to 350*.
- Mix together the frozen hash browns, cream of chicken soup, sour cream, and shredded cheddar cheese.
- Spread evenly in a 9x13 pan and top with crushed corn flakes. Melt the butter and drizzle over the top.
- Leave uncovered and bake for 1 hour.
- Serve immediately.

Yogurt is your best substitute for sour cream. Full fat Greek or natural yogurts work best, but low-fat or even nonfat can be used!

This is a great recipe, just left a star off for the cornflake amount. Not sure what one tsp of crushes cornflakes is supposed to cover. I used about a cup and a half, and pre mixed the cornflakes with the melted butter before topping. Otherwise great recipe.
