After my family ate their Hawaiian Haystacks tonight I asked them to rate it on a scale of 1-5, with 5 being the best. My husband who won’t rate anything higher than a 4 gave it an immediate 5! My daughter rated it at a 27.5, a little out of the rating scale and a friend of ours gave it a 5!
This is one of my top 10 favorite meals and I would eat it once a week if my family would let me. I know it sounds simple…. Hawaiian Haystacks, but I bet you’ll love it too if you try it!

3-4 boneless chicken breasts
2 cans cream of chicken soup
1 3/4 cup milk
6 green onions
1/2 of a small yellow onion
3 cups instant white rice
3 cups water
Salt and Pepper
1/8 cup extra virgin olive oil
1 can of pineapple
Frenches Fried Onions
This is a multi step process and I highly recommend making your rice earlier in the day so it turns out super delicious like ours did!
Bring 3 cups of water to a boil and add instant rice. Remove from heat and cover with lid for 10 minutes and allow rice to absorb all water. Remove lid and fluff with fork. Dump out in a casserole dish and let cool on the counter for 15-20 minutes (we put ours out in the snow since it was only 20° outside). Cover with plastic wrap and put in the fridge for 3-4 hours.
Once your rice is cooled and ready then you can preheat your oven to 350° and place chicken in a broiling pan. Sprinkle with salt and pepper on both sides. Cook in the oven until the internal temperature reaches 165°.
Place cream of chicken soup in a large sauce pan. Whisk in milk. Place on med-low heat and let heat slowly while you prepare the other ingredients.
Chop your green onions and 1/2 of your small yellow onion. Place the green onions in a dish and set aside.
Heat oil in another sautee pan and add onion and cook over medium heat for about 2 minutes. Add cold rice and sautee for about 5 minutes while stiring frequently.
Take chiken out of oven and cut into bite sized pieces. Add cooked chicken to cream of chicken soup.
Layer fried rice, chicken & soup mixture, green onions, pineapple & Frenches Fried Onions on your plate…. and enjoy!
