Hi Everyone! It’s Emily from Eco-friendly Emily and I have something awesome to share with you! Why is it awesome? Well, because it is yummy, it is fast, it’s healthy and it’s inexpensive. I don’t know about you, but all of those things are top priorities for me when I look at recipes. You know what else I like to see this time of year when I look at recipes? Pumpkin!
I love fall. I love the way the air feels crisp but not outright cold, the way the sun shines on the trees while leaves are turning, and when every single coffeeshop, especially Starbucks, brings out Pumpkin Spice Lattes. I adore Pumpkin Spice Lattes. Unfortunately, they are pretty pricey and really not very good for you, so having one for breakfast every single morning like I want to is really not an option. Plus, I decided to give up caffeine completely last month, so I really needed to find a Pumpkin Spice alternative. Enter the Pumpkin Spice Smoothie.
Since I knew that I was going to be making this in the mornings, I knew it had to be simple. I don’t like for anything to take more than about 5 minutes to make in the morning. Definitely not a morning person! I gathered up my simple ingredients: pumpkin puree, a banana, Vanilla Chai protein powder, and milk. I used Almond Milk when I took the pictures for this post, but it’s yummy with any kind of milk. I’ve tried Almond, Almond Coconut, Soy and dairy milk. I’ve also learned that this is my favorite protein powder to use, although in a pinch the Vega One kind is good too.
Just put everything in the blender and you’re good to go! It seriously does not get any easier than this! I wanted mine to be special, so I topped it off with some whipped cream and a shake of Pumpkin Pie Spice, much like Starbucks puts on top of their Pumpkin Spice Lattes. I thought it was a delicious breakfast. My two year old completely agreed. In fact, he begs for these smoothies! You can see the recipe by clicking “More” below.
- ½ cup pumpkin puree
- 1 banana
- 2 scoops/1 pouch Vanilla Chai protein powder
- 1 cup milk of choice (plus more to taste)
- Place 2-3 large ice cubes in blender.
- Add pumpkin, banana, and protein powder.
- Pour in milk.
- Cover and blend, adding milk to bring to the consistency you like.
- Optional: Top with whipped cream and a sprinkle of Pumpkin Pie Spice
