No-Bake Avalanche Cookies

I have a new favorite treat to share with you guys today! They're called no-bake Avalanche Cookies. Not sure that they're technically a cookie but that's ok because they are so gooood!
If I had to describe them they are kind of like a peanut butter version of a Nestle Crunch Bar and trust me that's not a good thing because you kind of want to eat the whole batch when you make them.
I'm not kidding. I ate half the batch while I was taking pictures and was sick the whole rest of the night. It was totally worth it though.
I kind of knew that I was going to love this recipe when I saw it over at Cookies and Cups! She made hers with mini-marshmallows and she also has some killer step by step photos if you want to head over there and take a peek at her post.
Did I mention how easy these were to make. I put 10 minutes on the recipe but seriously they were done in no time. The hardest part for me was to get them all lined up and pretty on the Silpat to take pictures. I kind of obsess over things like food in straight lines and silly stuff like that.
If you have a peanut tree nut allergic child read under the recipe for my recipe suggestions. Our daughter has a peanut allergy so we have to substitute our ingredients when she's going to be eating with us so I know how it is!
No-Bake Avalanche Cookies
Ingredients
- 1 cups Rice Krispies
- 1 cup Honey Nut Cheerios
- 1 lb white chocolate
- ¼ cup creamy peanut butter
- ¼ cup Biscoff Cookie Butter
DIRECTIONS
- Line a baking sheet with parchment paper or a silpat and set aside.
- Add your Honey Nut Cheerios and Rice Krispies to a large bowl and set aside.
- Break up your white chocolate into smaller chunks and place in a microwave bowl. Heat in 30 second increments making sure to remove and stir in-between.
- When your chocolate is all melted add your peanut butter and Biscoff and stir well. It should melt and mix well. If it's a bit thick you can put it in the microwave for an additional 15 seconds.
- Pour your chocolate mixture over your cereal and stir well.
- Scoop the mixture using a tablespoon and drop onto your lined baking sheet.
- Put in the fridge until the chocolate is cold and set.
- -- I think these are better if kept in the fridge. When it gets warm the chocolate and peanut butter gets a bit sticky.
Nutrition
These would be perfect to take to a kids holiday party... unless you can't take peanut butter into the classroom or have a peanut allergic child like we do. If you find yourself in that situation then pick up some Wowbutter (it's soy butter that tastes exactly like peanut butter) and then even the most sensitive peanut allergic kids can enjoy these treats.

Hi James, I think you could easily substitute regular semi-sweet or milk chocolate in place of the white chocolate!

Doesn’t Biscoff make many different butters, such as nuts? Am I correct in assuming you mean “cookie butter”? If not, which do you mean?

Do you think you could substitute the rice krispy cereal with quick-cooking oats, like what is used in a standard no-bake cookie? And if so, can I call it breakfast?! Ha!

Gonna make these for sure...however, still not sure about the Biscoff...what and/or category, so I'm just omitting it.
Check the. "Time" section in your recipe... Bit confusing there.

Would these be considered gluten free?

Hi Jamie, no... these would not be considered Gluten Free. The Biscoff has Wheat as an ingredient and the Cheerios are processed on the same equipment as other products that have gluten. If you didn't use the Biscoff and maybe another cereal option then you could make it Gluten Free! Hope that helps 🙂
