Instant Pot Pot Roast Recipe
Pot roast for Sunday dinner at home is one of my all time favorite recipes to eat! The tender pull apart meat paired with the delicious gravy, it's one of the recipes I always look forward to on my birthday!
I've always only made a Pioneer Woman Instant Pot Pot Roast for special occasions because it takes so long to cook. 8-9 hours in the Slow Cooker is too long to wait when you're hungry and it smells so good cooking.
How Long Does a Pot Roast Take to Cook in a Pressure Cooker
Now that I have an instant pot I can make the same delicious recipe that I love for my birthday, but in only two hours start to finish.
It takes about 20 minutes to get everything prepped and the meat browned. Once you seal the lid shut this roast cooks for 55 minutes. That's right, in just an hour and a half you can a hearty meat and potatoes dinner on the table.

INGREDIENTS FOR EASY POT ROAST
Here's what you'll need to make this recipe:
- chuck roast
- salt and pepper
- olive oil
- butter
- flour
- hot water
- beef bouillon base
- red wine
- tomato paste
- carrots cut into large chunks (can substitute frozen vegetables)
- golden potatoes cut into 12 pieces (cut each potato in half, then each half into 6 pieces) (can substitute red potatoes)
- sweet onion cut into large chunks
- bunch of fresh rosemary
- fresh thyme
How to Make a Tender Pot Roast in the Instant Pot
FIRST STEP: In your Instant Pot, pour olive oil and butter. Press the Saute button, then Adjust until the red illuminated lights says MORE.
SECOND STEP: Generously salt and pepper both sides of the roast.
THIRD STEP: When the Instant Pot is hot and the butter is melted, place the roast in the Instant Pot and brown on both sides (about 5 minutes each side, cooking times vary between pots so keep an eye on the meat).
FOURTH STEP: Dissolve beef bouillon base in hot water.
FIFTH STEP: Remove from Instant Pot. Sprinkle flour on the bottom of the pot and whisk. Slowly pour in the beef broth, red wine and tomato paste. Whisk until the mixture thickens, about 30 seconds.
SIXTH STEP: Place the roast back into the pot and cover with rosemary and thyme.
How to Make the Best Pressure Cooker Roast
SEVENTH STEP: Turn the Instant Pot off and place the lid on the Instant Pot (you may have to wait for it to cool slightly).
EIGHTH STEP: Turn the vent to “sealing” and press Manual and set the time to 45 minutes.
NINTH STEP: When the timer goes off, do a quick release to release the pressure by carefully moving the vent to “venting” and let the steam release. When the steam releases, carefully remove the lid and remove the rosemary and thyme and then add the potatoes, carrots and onions
TENTH STEP: Put the lid back on, turn the vent to “sealing”. Press Manual and set the time to 10 minutes.
ELEVENTH STEP: When the timer goes off, quickly release the steam. Carefully remove the lid and scoop out the potatoes, onions and carrots onto a serving platter. Place the roast on top. Strain and reserve the liquid for serving.
