This Old Fashioned Triple Lemon Poke Cake recipe is one of the best homemade cakes you can make during the summer, holidays, and for special family occasions.

Lemon Poke Cake

Ingredients for Easy Lemon Poke Cake Dessert
CAKE:
- yellow cake mix
- instant lemon pudding, dry mix
- water
- vegetable oil
- eggs
PUDDING TOPPING:
- instant lemon pudding, dry mix
- whole milk
- powdered sugar
How to Make a Lemon Poke Cake with Pudding
FIRST STEP: Pour the cake and pudding mix into a large mixing bowl.
SECOND STEP: Add water, oil and eggs. Mix until just combined.
THIRD STEP: Pour into cake pan and bake at 350 degrees for 25-30 minutes.
FOURTH STEP: When the poke cake with yellow cake mix is finished baking, remove from oven and let cool slightly.
FIFTH STEP: Poke 12 holes in the cake using the handle of a large round spoon.
SIXTH STEP: Mix the lemon pudding, milk and powdered sugar. Stir until all ingredients are well combined. Pour half of the pudding over the top of the cake, making sure it sinks into all of the holes.
SEVENTH STEP: Mix the remaining pudding until it thickens completely then spread over the top of the cake. Place in the refrigerator for 3-4 hours until completely set and chilled.
Ingredient Subsitutions
CAKE MIX: Duncan Hines is my favorite go to box cake mix for this recipe but feel free to use any yellow box cake mix.
JELLO PUDDING: If you want a strong lemon flavor in this cake definitely use an instant lemon jello pudding mix. If you want a more subtle lemon flavor you could use always use 2 lemon, 1 vanilla flavored pudding.
