{Mini} Chocolate Chip Muffins with Streusel Topping

Oh my goodness you guys, these Mini Chocolate Chip Muffins w/ Streusel Topping are so good. Not good like yum thanks for making them good. Good like take them and run so you don't have to share with anyone kind of good. I found a recipe for blueberry muffins over at Deliciously Sprinkled and let me tell you that they look delicious! Lick the screen kind of delicious. Run to your kitchen because you want to make them right now kind of delicious. So that's kind of what I did. I got everything ready and mixed together and went to get my blueberries out of the freezer and they looked like they had freezer burn on them. I felt sad and maybe a little worried because I had just mixed everything up and now I didn't want to use my freezer burn blueberries because that would be nasty. So I decided to make mini chocolate chip muffins instead and I'm so glad I did because they are so incredibly delicious!
I can only imagine how good the blueberry muffins must be. Those are on my list of thing to make very, very soon!
Honestly, I'm going to have to give away some of these muffins or I'm pretty sure that I'm going to eat the whole batch... like all of them today! #sogood

{Mini} Chocolate Chip Muffins with StreuselTopping
Ingredients
- 1 ½ cup white flour
- ¾ cup sugar
- ½ teaspoon salt
- 2 teaspoons baking powder
- ⅓ cup vegetable oil
- 1 egg
- 1 teaspoon vanilla extract
- ½ cup whole milk
- ½ + 2 tablespoons mini chocolate chips
- *For the Streusel Topping*
- ⅔ cup brown sugar
- ¼ cup flour
- ¼ teaspoon cinnamon
- 2 tablespoons butter
Instructions
- Pre-heat your oven to 400°
- Spray the insides of your muffin tins with non stick cooking spray
- In a large bowl mix your flour, sugar, salt, baking powder and stir.
- In a medium bowl mix your egg, vegetable oil, vanilla extract and milk. Whisk together.
- In a small bowl mix your brown sugar, flour, cinnamon and butter. Mix until crumbly.
- Gently fold your wet ingredients into your dry ingredients being sure not to mix too much or your muffins will turn out rubbery.
- Add your chocolate chips and fold in until just mixed in.
- Add muffin mix to your tins and fill the cups about ½ way. Top with the Streusel topping.
- Cook at 400° for 16-18 minutes.
- Remove and let cool for 10 minutes before serving.
