How to Make Peach Cobbler
FIRST STEP: Preheat the oven to 425 degrees. Spray a 9x13 deep sided baking dish with cooking spray and set aside.
SECOND STEP: In a large bowl combine the peaches, lemon juice, sugar, brown sugar, cinnamon, allspice, vanilla extract, and cornstarch. Stir well to coat all peaches.
THIRD STEP: Pour peach mixture into the bottom of your greased 9x13 baking dish. Place in the oven to bake peaches for about 10 minutes while you make the crust and cinnamon sugar topping.

FOURTH STEP: In a separate medium bowl combine flour, sugar, brown sugar, baking powder, salt, and grated butter. Stir to combine. Pour hot water into a bowl and mix until a dough mixture forms.
FIFTH STEP: In a separate small bowl combine the sugar and cinnamon, stir well.
SIXTH STEP: Remove your peaches from the oven and drop spoonfuls of the crust topping mixture on top of the peaches. Use a spoon or spatula to spread out the crust topping mixture so it’s evenly covering the peaches. Sprinkle the cinnamon sugar topping evenly over the top of the crust topping.
SEVENTH STEP: Place back in the oven and let cook for 25-30 minutes, or until the crust topping is browned and the peach juices are bubbling up on the sides of the cobbler.
EIGHTH STEP: Serve warm with vanilla ice cream.
Cooking Tips
Make sure to evenly spread the crust topping mixture over the peaches. It will not even out while cooking and you will end up with rough heaps on the top that may not bake evenly.
Many people like to make peach cobbler with bisquick instead of making their own crust topping. The difference with using bisquick is you spoon the peaches on top of the bisquick mixture and the batter rises around the peaches.
You can easily substitute the peaches with another fruit in this recipe. Consider trying apples, strawberries, or even a mixture of your favorite types of berries!
Make this recipe ahead of time. Put all ingredients into the casserole dish without cooking. Freeze for up to 2 months. When ready to cook, do not thaw and instead add 20 minutes to the bake time.

Storing this Recipe
IN THE FRIDGE: Tightly cover and store in the fridge for up to 3 days. Cooked fruit will not last long in the fridge, so consider halving the recipe if you will not be able to eat the full cobbler.
IN THE FREEZER: Store a cooked cobbler in the freezer for up to 6 months. Re-heat by following the original baking instructions. Store an uncooked cobbler for up to 2 months and add 20 minutes to the original baking instructions when cooking.
