If you like apple pie, you’ll love this quick dessert that’s perfect for an easy weeknight dessert. Warm apple pie filling and cinnamon are baked to a buttery golden brown inside a flour tortilla and then topped with a drizzle of caramel sauce.
Dessert enchiladas are a sweet twist on a Tex-Mex classic. With just six ingredients, you can whip up this simply delicious dessert for an easy treat on a chilly evening.
Serve apple enchiladas warm with a scoop of vanilla ice cream and a dollop of whipped cream on top. You don’t have to save these delightful treats just for dessert either. Enjoy them for a special breakfast or brunch with yogurt and a mug of homemade pumpkin spice latte.
Apple Enchiladas Ingredients
- Apple pie filling - or 3 cups fried apples
- Flour tortillas - burrito-size flour tortillas
- Cinnamon - ground cinnamon
- Sugar - granulated sugar
- Caramel sauce - plus more for drizzling
- Butter - salted butter, melted
Apple pie filling is yummy and makes this recipe incredibly easy to make. If you prefer you could also use homemade fried apples for this dessert recipe. You don’t have to be limited to just apple enchiladas, any fruit fillings would be amazing in this simple recipe.
In addition to drizzling caramel sauce on top of the apple enchiladas, you could also add more sauce to the inside. You could use premade caramel sauce, caramel ice cream topping, or homemade caramel sauce.
Use a pastry brush to help spread the sauce over all the tortillas. The more the tortillas are covered with the sauce the better they will caramelize during baking, which is also why basting once during baking is helpful to make sure the tortillas come out golden brown and caramelized.
How to Make Apple Enchiladas
FIRST STEP: Preheat the oven to 350°F. Spray a 9x13-inch baking dish with cooking spray.
SECOND STEP: In a small bowl, combine sugar and cinnamon. Set aside.
THIRD STEP: Bring the flour tortillas to room temperature (or heat for a few seconds in the microwave) so that they are more pliable for folding.
FOURTH STEP: Spoon about ½ cup of apple pie filling in a line down the center of a flour tortilla, leaving room to fold over the edges. Sprinkle 1 teaspoon of cinnamon sugar over the pie filling.
FIFTH STEP: Fold top and bottom edges in toward the center and then roll the tortilla up, folding in the left side and rolling until it forms an enclosed burrito shape.

SIXTH STEP: Continue to fill and roll the remaining tortillas.
SEVENTH STEP: Place seam side down in the greased baking dish sprayed with cooking spray.
EIGHTH STEP: Mix together the melted butter and ½ cup caramel sauce to combine.
NINTH STEP: Pour the caramel butter over the enchiladas, using a spoon or spatula to spread the sauce over as much of the tortillas as possible. Sprinkle more cinnamon sugar over the top of the prepared enchiladas.
TENTH STEP: Let the enchiladas sit for 15 minutes or so to give the tortillas an opportunity to soak up a little bit of the sauce.
ELEVENTH STEP: Bake for 30-35 minutes or until the tortillas are lightly browned and caramelized on top. You can baste the enchiladas halfway through baking with the sauce that has pooled in the bottom of the dish.
TWELFTH STEP: Serve warm with an extra drizzle of caramel sauce and vanilla ice cream.
What tortillas should I use?
You can use either white or whole wheat tortillas for these apple enchiladas with caramel sauce. We don’t recommend using corn tortillas as they are not as pliable. Also, make sure to get the burrito size to ensure they are big enough.
Can I make another fruit flavor?
Any fruit fillings, such as cherry, would be amazing in this dessert recipe.
Can I use homemade caramel sauce?
While premade caramel sauce or caramel ice cream topping is super easy, you can also use homemade caramel sauce. In addition to drizzling caramel on top of the apple enchiladas, you can add caramel sauce to the inside also.
How to Store Apple Enchiladas
IN THE FRIDGE: To maintain the crisp exterior of the flour tortillas, apple pie enchiladas are best if they are eaten right away. Leftovers can be stored in an airtight container in the refrigerator for 2 to 3 days.
