Ritz Cracker Toffee

Ritz Cracker Toffee is the perfect balance of sweet and salty. As far as candy making goes, this is perhaps the easiest candy recipe to make. Perfect to nibble as a treat for yourself or to package up as a gift.

Candy can be fickle, but not this toffee recipe! No candy thermometer required! Just five ingredients are all you need to make crunchy, buttery, decadent toffee. Crackers give the toffee an extra crunch and enhance the buttery flavor with that extra flakiness and salt.
Making toffee is similar to making caramel, but instead of boiling water and sugar, it’s butter and sugar. This creates a firm candy, but one that flakes and melts. This texture is perfect atop the crispy crackers and combined with smooth chocolate.
Ritz Cracker Toffee Ingredients

- Ritz crackers
- Butter
- Brown sugar
- Chocolate chips
- Sea salt
This simple cracker toffee recipe can be adapted as desired. Don’t have Ritz crackers? Saltines provide a similar effect though less buttery. Other, sweeter versions could be made with graham crackers or even cookies.
Top the toffee with flaky sea salt as the recipe indicates, or dress it up! Almonds and toffee are made for each other: add sliced or chopped almonds atop the melted chocolate. Experiment with any variety of candy, nuts, sprinkles, shredded coconut, peppermint pieces, or a white chocolate drizzle!
How to Make Ritz Cracker Toffee
FIRST STEP: Preheat your oven to 425F. Start out by lining your baking tray with parchment because this is going to get sticky!
SECOND STEP: Place your Ritz crackers in an even layer along the bottom of the pan. When I had a bit of a gap, I just broke a cracker in half and fit it in.

THIRD STEP: Next, place your butter and brown sugar in a pot and heat until completely melted. Boil for 2 to 4 minutes and resist the urge to stir it – that can actually ruin your caramel.
FOURTH STEP: Immediately pour your homemade caramel over the top of the Ritz crackers. Use an offset spatula (the kind you use for icing cakes) to spread that gooey caramel evenly across the crackers.

FIFTH STEP: Pop the tray of crackers into the oven for 5 minutes to help thicken and set the caramel.
SIXTH STEP: Carefully remove the crackers after 5 minutes and place them on a heat-proof surface for the next step.
SEVENTH STEP: Next, sprinkle your chocolate chips in an even layer on top of your caramelized-crackers. Pop the tray back in the oven to help the chocolate chips melt a bit.
EIGHTH STEP: After 2-3 minutes, remove the tray, and immediately spread the chocolate chips with the offset spatula. The chocolate chips may not melt completely but you don’t want to risk burning the chocolate and ruining the whole pan.

NINTH STEP: Once the pan has cooled off, put it in the fridge to finish setting for about 2 hours. It will get hard enough that you can “crack” it or slice through it with a sharp knife.
Cooking Tips
Be careful when making the caramel: boiling sugar is not only temperamental but dangerous. Don’t stir or the caramelization process will be ruined and may crystallize instead. Keep small children away as sugar burns can be worse than oil burns even. Sugar maintains heat so be very careful not to touch it when spreading the toffee.
You must bake the toffee for at least 5 minutes in the oven so that it bubbles and reaches its second boiling point, setting the candy to become toffee.
Sprinkle the chocolate chips as soon as the toffee is out of the oven. The heat should be enough to melt the chocolate. Wait until the chocolate chips are shiny, then use a spatula to spread the chocolate.

Storing this Recipe
Store in an airtight container for up to a week in the refrigerator or up to 3 months in the freezer.
