Slow Cooker Rotel Dip Ingredients
- Velveeta - cubed
- Rotel - can Rotel
- Ground beef
Rotel is canned diced tomatoes with chilis and spices already mixed in. While the Rotel makes this dip easy, if you don’t have a can handy you can also use your favorite chunky salsa
Practically anything tastes better when dipped in this Rotel dip, including tortilla chips, crackers, pretzels, and bagel chips. Try dipping vegetables like sliced peppers, baby carrots, and bite-sized cauliflower and broccoli.
Instead of ground beef, you could make your dip with ground sausage, shredded chicken, or any other kind of meat as long as it is cooked before it goes into your crockpot. While you are warming your dip in the crockpot, if it gets too thick you can always add a couple of splashes of milk to thin it.
How to Make Slow Cooker Rotel Dip
FIRST STEP: Brown the pound of ground beef in a skillet until cooked through.
SECOND STEP: Add the ground beef, Rotel, and Velveeta to your slow cooker. Cube the Velveeta into pieces that are about an inch wide so that it melts evenly.
THIRD STEP: Cover and cook on low for 2 - 3 hours, until the cheese is completely melted.

FOURTH STEP: Stir occasionally to keep the cheese from browning around the sides of the slow cooker.
FIFTH STEP: Serve with chips, crackers, or veggies.
How do I increase the spice?
Add some heat to this dip by adding a can of green chilis or some sliced jalapeños to your slow cooker.
Can I use ground turkey?
Instead of hamburger, you can use ground turkey, mild or spicy ground sausage, shredded chicken, or any other kind of meat, as long as it’s cooked before it goes into your crockpot.

What can I use instead of Rotel?
You could substitute fresh tomatoes or chunky salsa for Rotel. You could also mix in these items along with the can of Rotel.
