Slow Cooker Rotel Dip Ingredients

Ingredients you'll need to make Slow Cooker Rotel Dip:
- 16-ounces Velveeta, cubed
- 1 10-ounce can Rotel – no need to drain
- 1 pound ground beef
Ideas for Dippers:
Our slow cooker Rotel dip is hearty, flavorful, and endlessly scoopable with chips, veggies, or whatever dippers you love. We have tried mini naan bread, pita chips, pretzels, and all kinds of crackers. You could also try waffle fries!
What can I use instead of beef?
GROUND BEEF: The classic version of this dip uses ground beef, but it’s super flexible. You can swap in (or mix in!) ground mild or spicy sausage for extra flavor. Feel free to use any meat you love—just make sure it’s fully cooked before adding it to the crockpot.
How can I make this spicier?
SPICE: Want a little extra kick? Stir in a can of green chiles to boost the heat and add even more flavor to your slow cooker dip.
How to Make Rotel Dip In A Crock Pot

FIRST STEP: Brown the pound of ground beef in a skillet until cooked through.
SECOND STEP: Add the ground beef, Rotel, and Velveeta to your slow cooker. Cube the Velveeta into pieces that are about an inch wide so that it melts evenly.
THIRD STEP: Cover and cook on low for 2 - 3 hours, until the cheese is completely melted.
FOURTH STEP: Stir occasionally to keep the cheese from browning around the sides of the slow cooker.
FIFTH STEP: Serve with chips, crackers, or veggies.
Pro Tip
Want to make this ahead for a party? Brown the beef in advance and keep it chilled, then just toss everything in the crockpot before the party.

How to Store Rotel Dip Crockpot
IN THE FRIDGE: Store leftover Rotel and Velveeta dip crock pot in an airtight container in the refrigerator for 3 to 4 days. We don't recommend freezing this dip, as it won't thaw well.
How To Serve
You can leave this tasty dip in your slow cooker on the warm setting for up to three hours until you’re ready to serve it.
If you want, you can transfer it to a serving bowl, but we usually serve it straight from the slow cooker so it stays nice and warm.
If you have a smaller crockpot warmer, you can put some in there on a serving table, but you might have to refill it throughout your party.
PRO TIP: If you’re simmering this dip in your crock pot and find that it’s thicker than you’d like, add a couple of splashes of milk to thin it.
Bonus: This Rotel Velveeta Crock Pot dip doubles beautifully, and leftovers can be turned into queso tacos the next day. (SO delicious - Trust me.)
