While Birthday Cake Delight takes just 20 minutes of prep time, making it a day ahead of time, and refrigerating it overnight, will allow it to thicken and makes it easier to cut into slices. You can even freeze the birthday dessert if you want to make it further in advance.
Perfect for any celebration, Birthday Cake Delight is sometimes also called Birthday Cake Lush. No matter what you call it, this layered pudding dessert is simply dreamy. Serve a slice of this refreshing dessert with a scoop of no-churn birthday cake ice cream.
Birthday Cake Delight Ingredients
- Vanilla sandwich cookies - approximately 36 cookies
- Butter - salted butter
- Cream cheese
- Sugar - powdered sugar
- Vanilla extract
- Whipped topping - frozen whipped topping (Cool Whip)
- Sprinkles - rainbow sprinkles
- Pudding - vanilla-flavored instant pudding mix or white chocolate pudding, if available
- Milk - whole milk
What’s a birthday cake without sprinkles? You can pick whatever color or style of sprinkles you want for this cake. If you’re making this cake for a holiday, and not a birthday, you could even choose color-coordinated sprinkles for the occasion. You can also top your dessert with vanilla cookie crumbles along with the sprinkles.
If you can’t find vanilla sandwich cookies for the crust you can also use vanilla wafers or graham cracker crumbs. You could also make a chocolate crust using chocolate sandwich cookies.
The crust isn’t the only place you can switch up the vanilla flavor for chocolate. If you want you can swap the flavor of the pudding mix for your favorite flavor. Try chocolate for a chocolate cake delight or butterscotch for a butterscotch delight.
How to Make Birthday Cake Delight
FIRST STEP: Butter an 8x8 glass baking dish and set it aside.
SECOND STEP: In the bowl of a food processor, crush vanilla sandwich cookies until small even crumbs form. Add melted butter and pulse until combined.
THIRD STEP: Press cookie/butter mixture into the greased baking dish and place in the freezer for 10 minutes to chill while preparing the next layer.
FOURTH STEP: With a hand mixer or in the bowl of a standing mixer, beat together cream cheese, powdered sugar, vanilla, and 1 cup of frozen whipped topping until smooth and creamy (about 5 minutes). Add in sprinkles and stir just until combined.
FIFTH STEP: Spread cream cheese mixture over the chilled cookie crumb layer and place back into the freezer for another 10 minutes.

SIXTH STEP: With a whisk or beater, combine both packages of pudding mix, milk, and 1 cup of frozen whipped topping. Whisk until combined and mixture begins to thicken.
SEVENTH STEP: Spread pudding layer over the chilled cream cheese layer and chill for 30 minutes or until pudding is set.
EIGHTH STEP: Gently top whipped topping, creating swoops with the back of a spoon or spatula (you may have leftover whipped topping). Top with more sprinkles. Chill until ready to serve.
