Colby-Jack cheese is a mild cheese that is a classic combination of Colby and Monterey Jack cheese. You can purchase marbled Colby-Jack cheese or make your own by mixing equal parts of Colby and Monterey Jack cheeses. You could also use another mild cheese like Pepper Jack, Cheddar Cheese, or Gouda

How to Make Sausage Hashbrown Bites
FIRST STEP: Preheat oven to 400°F. Line two cookie sheets with parchment paper and set them aside.
SECOND STEP: In the bowl of a standing mixer or large mixing bowl, mix together flour, baking powder, and salt.
THIRD STEP: Drizzle melted butter into flour mixture while the mixer is running to form a crumbled mixture.
FOURTH STEP: Add grated cheese, sausage, hash browns, and cream cheese and beat until fully mixed. Be sure to scrape the sides and bottom of the bowl with a spatula and beat a bit longer to make sure all the flour from the bottom of the bowl has been incorporated.
FIFTH STEP: Use a cookie scoop or tablespoon to scoop balls of the mixture. Place scoops 1” apart on prepared cookie sheets. You can roll the balls in your hands to make them more smooth and compact, but this isn’t necessary.
SIXTH STEP: Bake for 25 minutes or until lightly browned.
