Skip the restaurant and make tasty ground beef enchiladas at home. These savory enchiladas are terrifically tasty and they can be on the table ready to eat in just 40 minutes.
A staple in most Mexican restaurants, now you can quickly make this incredibly flavorful dinner any night of the week. Enchiladas are often served with rice and beans, but you’ll also want to serve yours with plenty of tortilla chips, salsa, and queso.
Perfect for a busy weeknight, these easy ground beef enchiladas have seasoned ground beef, rolled up in soft flour tortillas, and are smothered in enchilada and shredded cheese. The whole family will enjoy these cheesy, meaty enchiladas so much that they may start asking for them frequently!
Ground Beef Enchiladas Ingredients
- Ground beef
- Onion - yellow onion
- Garlic - minced garlic
- Salt
- Taco seasoning
- Enchilada sauce - red enchilada sauce
- Enchilada sauce - green enchilada sauce
- Green chiles - diced green chiles
- Tortillas - flour tortillas
- Cheese - Mexican blend shredded cheese
- Cilantro - chopped cilantro for serving
Mexican blend shredded cheese has a perfect spicy seasoning flavor to it that compliments the enchilada flavors. Another good cheese choice would be Pepper Jack cheese. If you prefer less spice you could also choose a shredded cheddar or mozzarella cheese.
Ground beef is an easy, and affordable, meat option for these enchiladas. If you prefer, you can also use ground chicken or ground turkey in place of the hamburger.
Top your enchiladas with some of your favorite taco toppings, things like sour cream or diced tomato. Diced green onions, avocado, or salsa also make delicious toppings.
How to Make Ground Beef Enchiladas
FIRST STEP: Preheat the oven to 350 degrees and spray a 9x13 baking dish with cooking spray. Set aside.
SECOND STEP: In a large skillet over medium heat cook the ground beef until no longer pink. Drain grease.
THIRD STEP: Add onion and cook for 5 minutes, or until softened. Add minced garlic and continue to cook for an additional 2 minutes.
FOURTH STEP: Add taco seasoning, red and green enchilada sauce, and diced green chiles. Stir well. Let simmer on low for 5 minutes.

FIFTH STEP: Divide meat mixture into 8 equal portions. Fill each tortilla with an equal amount of meat mixture.
SIXTH STEP: Divide 2 cups shredded Mexican blend cheese into 8 equal portions and place on top of each tortilla with meat mixture. Roll the tortillas tightly.
SEVENTH STEP: Pour ⅓ of the 28 oz can of enchilada sauce into the bottom of the 9x13 baking dish. Place rolled tortillas seam side down.
EIGHTH STEP: Pour the remaining enchilada sauce from the 28 oz can on top of the flour tortillas. Top with remaining 1- 1 ½ cups of Mexican blend shredded cheddar cheese.
NINTH STEP: Place the baking dish in the oven and bake uncovered at 350 degrees for 20 minutes.
What can I do with leftover enchilada sauce?
You can place the remaining ½ of red and green enchilada sauce from the 10 oz cans, plus the remaining taco seasoning into a freezer Ziploc bag. Mix it together well, then seal the bag shut. Place this in the freezer and save it for the next time you have enchiladas.
Can you freeze ground beef enchiladas?
Yes, you can freeze enchiladas. Wrap them with plastic wrap and aluminum foil and store them in the freezer.

How to Store Ground Beef Enchiladas
IN THE FRIDGE: Allow enchiladas to cool completely and then store leftovers in an airtight container in the refrigerator for 3 to 4 days.
IN THE FREEZER: Enchiladas are a great make-ahead freezer meal. Make and assemble your enchiladas following the instructions above, but you should skip adding the cheese to the top of the enchiladas as directed in step 8. Instead, after adding the sauce, bake the enchiladas for about 8 minutes. Remove enchiladas from the oven and allow them to cool down completely. Wrap them in plastic wrap and aluminum foil before storing them in the freezer. When you are ready to bake, remove the enchiladas from the freezer, and top with cheese. Preheat the oven and bake as directed above.

- 1½ lbs Ground Beef
- 1 yellow onion diced finely
- 1 tbsp minced garlic
- ½ tsp salt
- ½ packet taco seasoning
- ½ red enchilada sauce (10 oz.)
- ½ green enchilada sauce (10 oz.)
- 28 oz. can red enchilada sauce
- 4 oz. can diced green chiles
- 8 large flour tortillas
- 3 - 3½ cups Mexican blend shredded cheese
- Chopped cilantro for serving
