Ingredients for Cherry Cheesecake Lush
- Vanilla sandwich cookies
- Salted butter
- Cream cheese
- Granulated sugar
- Vanilla extract
- Whipped topping (Cool Whip)
- Cheesecake flavored instant pudding mix
- Whole milk
- Cherry pie filling
- Chopped pecans
Vanilla sandwich cookies make a subtly sweet crust for the cherry cheesecake lush, but you could also use a graham cracker crust, a Nilla crust, or an Oreo crust. The flavors of any crust can pair well with the cherries and cheesecake.
In addition to cherries, you could also make your cheesecake lush using blueberry, blackberry, strawberry, or even peach pie fillings instead. By using cherry pie filling, instant pudding mix, and cool whip, you have an easy dessert that only takes a few minutes to assemble.
The key to a lush is a crushed cookie base layer, a cream cheese layer, a pudding layer, a fruit topping layer, and a whipped topping. Place the dessert into the refrigerator to set and then you simply slice, serve, and enjoy.
How to make Cherry Cheesecake Lush
FIRST STEP: Butter a 9x13 glass baking dish and set it aside.
SECOND STEP: In the bowl of a food processor, crush vanilla sandwich cookies until small even crumbs form.
THIRD STEP: Add melted butter and pulse until combined.
FOURTH STEP: Press cookie/butter mixture into the greased baking dish and place in the freezer for 10 minutes to chill while preparing the next layer.
FIFTH STEP: With a hand mixer or in the bowl of a standing mixer, beat together cream cheese, granulated sugar, vanilla, and 1 cup of frozen whipped topping until smooth and creamy.
SIXTH STEP: Spread cream cheese mixture over the chilled cookie crumb layer and place back into the freezer for another 10 minutes.
SEVENTH STEP: With a whisk or beater, combine both packages of pudding mix, milk, and ½ cup of frozen whipped topping. Whisk until combined and mixture begins to thicken.
EIGHTH STEP: Spread pudding layer over the chilled cream cheese layer and chill for 30 minutes or until pudding is set.
NINTH STEP: Pour cherry pie filling over the chilled pudding layer. Spread carefully so that it doesn’t mix with the layers beneath.
TENTH STEP: Gently top with remaining whipped topping. Sprinkle with chopped pecans and chill in the fridge for 1-2 hours.

I love that you can freeze this! If you freeze it, would it be better to wait until you begin to defrost it to put the whipped cream on top or does it make a difference?
