- Cream cheese
- Sprinkles - unicorn sprinkles, or multi-colored sprinkles
- Candy melts - pink candy melts
- Candy melts - purple candy melts
- Candy melts - blue candy melts
- Candy melts - yellow candy melts
Adorable no-bake unicorn cheesecakes are topped with unicorn sprinkles which are often an assortment of unicorn shaped heads, brightly colored jimmies, nonpareils, confetti sprinkles, and more. If you prefer you can also substitute colorful sprinkles instead of unicorn sprinkles for the tops of the coated cheesecake bites. More great options for coating your no-bake cheesecake bites are powdered sugar, crushed graham crackers, sprinkles, nuts, and melted chocolate.
If you want to make your cheesecake bites ahead of time you can allow the uncoated cheesecake bites to sit overnight in the refrigerator before the next step. Be sure to pull them out and let them come to room temperature slightly because the cake mix may expand, and the coating may crack if you coat the bites too soon.
To avoid lumps in the cheesecake mixture make sure the cream cheese is at room temperature before you begin. If the coating becomes too thick while you are dipping, you can reheat it in the microwave for 15-second intervals, stirring well after each interval until smooth.
How to Make Unicorn Cheesecake Bites
FIRST STEP: It is important to heat treat the dry cake mix before adding it to the cream cheese. Add the dry cake mix to a medium-sized heat-safe bowl. Microwave the dry cake mix in two 30-second intervals, stirring after each interval. Allow the cake mix to cool completely before mixing into the cream cheese.
SECOND STEP: Using a medium-sized mixing bowl and a handheld mixer on medium-high speed, beat the cream cheese for 1½ to 2 minutes until completely smooth.
THIRD STEP: Sprinkle the completely cooled dry cake mix and 3 tablespoons of sprinkles over the top of the cream cheese. Continue mixing just until well incorporated.
FOURTH STEP: Tightly cover the cream cheese mixture and chill in the refrigerator for 2 hours.
FIFTH STEP: Line a baking sheet with parchment paper and set it aside.
SIXTH STEP: Use a 1 tablespoon cookie scoop, and scoop the cheesecake dough. Roll the dough into a ball and place it on the prepared baking sheet.
SEVENTH STEP: Using four small heat-safe bowls, add one color of candy melt into each bowl. Microwave in 30-second intervals, stirring well after each interval, until completely melted. (You will be able to roll 7 cheesecake bites in each color)
EIGHTH STEP: Roll one cheesecake bite in one of the colors. Place the coated bite onto a fork and gently tap any excess coating off. You can use a spoon to pour the coating over any bare spots. You can use a toothpick to gently push the coated cheesecake bites onto the prepared baking sheet.
NINTH STEP: While the cheesecake bite is still “wet”, sprinkle the unicorn sprinkles over the top of the coated bites. Repeat the coating and sprinkling process until all the bites are coated. Allow the coating to harden completely before serving.
Do these cheesecake bites need to be refrigerated?
These adorable unicorn cheesecakes should always be served chilled, so keep them in the fridge until you are about ready to serve them.
Do I have to microwave the cake mix?
Since the cake mix has uncooked flour that may have pathogens, it makes it unsafe to consume raw. Heating it in the microwave will kill any pathogens and make it safe to use in this no-bake cake balls recipe.
