- Baking powder
- Salt
Peanut butter and chocolate are a favorite combination, and you can easily add some chocolate chips to this peanut butter bread. Simply add chocolate chips in with the batter, as many or as few as you prefer. You can even try different flavors of chips such as butterscotch or peanut butter chips.
Another tasty addition to your peanut butter bread is peanuts to give the bread a satisfying crunch. Crush up the peanuts and mix them into the batter or sprinkle a few on top.
Instead of using eggs, you can substitute either ¼ cup of applesauce or pureed bananas into this quick bread recipe. However, substituting with these ingredients will change the end flavor slightly.
How to Make Peanut Butter Bread
FIRST STEP: Move the oven rack to the center of the oven. Preheat the oven to 350 degrees.
SECOND STEP: Prepare an 8x4 loaf pan by spraying the pan lightly with nonstick spray and then placing a piece of parchment paper into the pan.
THIRD STEP: Using a heavy-duty blender or food processor, pour in the milk, sugar, peanut butter, and eggs. Process for 1-2 minutes until a smooth batter (depending on the strength of your appliance).
FOURTH STEP: Next place the flour, oats, baking powder, and salt and process until smooth (about 1 minute). If your appliance is lower wattage just add the dry ingredients gradually.

FIFTH STEP: Pour batter into the prepared loaf pan.
SIXTH STEP: Place in the oven and bake for 1 hour and 10 minutes or until a toothpick comes out clean or with just a few crumbs on it.
SEVENTH STEP: Set a timer for 50 minutes and check the bread to make sure the top is not getting too brown. If it is getting too brown, you can cover it loosely with foil. Then continue baking.
EIGHTH STEP: Remove from the oven and let rest in the pan for 10 minutes on a cooling rack before removing.
NINTH STEP: Allow the loaf to completely cool before slicing to serve!
What if I forgot to bring the eggs to room temperature?
You can place the eggs in a cup of hot tap water for about five minutes to warm them up to room temperature.
How can I easily measure the peanut butter?
Spray the measuring cup with nonstick spray before measuring the peanut butter to help it slide easily out of the measuring cup.

Can I freeze peanut butter bread?
Store this quick bread in the freezer by wrapping it in plastic wrap and then aluminum foil.
How do I know when the bread is done?
Your peanut butter bread is done when a toothpick inserted into the center of the bread comes out clean.
How to Store Peanut Butter Bread
IN THE FRIDGE: Store leftover peanut butter bread in an airtight container in the refrigerator for up to a week.
IN THE FREEZER: Wrap bread tightly with cling wrap and aluminum foil or place it in an airtight container in the freezer for up to 3 months.

Notes
- Spraying the loaf pan with nonstick spray before placing the parchment paper helps the parchment paper stay in place when pouring in the batter

Hmmm… can you use quick oats instead of old fashioned oats? Please and thank you.

Hi, Michelle - the texture/consistency will be different so we recommend using old-fashioned oats for this one! Enjoy!

Just made this today for a little fresh breakfast treat and the recipe is DIVINE just as is! Mine was perfectly done right at the 50 minute mark. Moist, almost healthy tasting as I did not add any chocolate or other toppings. Will absolutely make again!
Will maybe add PB chips to the batter next time just for fun; but, recipe is great as is!
