Lemon fluff is a vintage no-bake dessert that combines tart lemon JELLO, sweet pineapple, and fluffy cream cheese. Refreshingly cool, everyone will love this sweet and tangy treat.
Lemon Fluff Ingredients
- JELLO - lemon jello
- Water - boiling water
- Cream cheese
- Pineapple - can of crushed pineapple with juice
- Whipped topping
Lemon fluff is such a bright and happy yellow color, that using a trifle or other see-through bowl is a beautiful way to showcase this dessert. Garnish your lemon fluff with fresh fruit or a dollop of whipped cream.
To make dividing the whipped topping easier you can purchase two 8-ounce containers rather than one 16 ounce container. Use 1½ containers, still 12 ounces, for the fluff, and the last half, 4 ounces, for the topping when serving.
For the best results, you want to make sure to chill your lemon dessert for at least 4 hours. That allows all of the flavors to blend together to create a creamy, citrusy, delight.
How to Make Lemon Fluff
FIRST STEP: In a medium-sized bowl, add the jello and carefully pour in the boiling water. Using a whisk, stir until dissolved. Set aside to cool, about 20 minutes.
SECOND STEP: In a large bowl, add the softened cream cheese and crushed pineapple. Using a hand mixer on low speed, mix together the cream cheese and pineapple, gradually increasing the mixer speed to medium-high. Mix together for about one minute until fully combined. There may be small flecks of cream cheese, and that’s okay.

THIRD STEP: Next, pour the cooled jello liquid into the cream cheese and pineapple mixture. Using the hand mixer, start on low speed so it doesn’t splash around a lot and begin to mix, gradually increasing the speed to medium until it is well-combined.
FOURTH STEP: Next, add the 12 ounces of Cool Whip. Begin with a low speed on a hand mixer and gradually increase the speed to medium-high until well-combined, about two minutes. It will still be in liquid form but trust the jello to do its work and it will solidify as it chills.
FIFTH STEP: Pour into a large glass serving bowl, cover with cling wrap and chill for at least four hours or until ready to serve. You can also use a 9x13 pan as an option instead.
SIXTH STEP: Serve with a dollop of Cool Whip and fresh berries or other fruit as garnish if desired.
Can I make fluff in other flavors?
You can easily change up the JELLO flavor and fruit to dozens of other combinations. Peach and strawberry fluff are both popular choices. You can also add extra flavors to this lemon fluff, for example adding in fresh raspberries.
