How to Make Baileys Fudge
FIRST STEP: Line a loaf pan with parchment paper and set aside.
SECOND STEP: Place the chocolate chips and sweetened condensed milk in a microwave-safe bowl.
THIRD STEP: Heat mixture, 30 seconds at a time, stirring between each interval. Heat for a total of 1 to 1½ minutes.
FOURTH STEP: Stir until the chocolate is completely melted though the mixture is thick; then stir in the Irish cream and vanilla extract. Initially, the mixture will be thick and lumpy, but as the Baileys incorporates, it will make a smooth pourable mixture.
FIFTH STEP: Spread fudge into the prepared loaf pan and chill in the refrigerator for 2 hours.
SIXTH STEP: Lift from the pan by the parchment paper and cut it into pieces.
Why isn’t my fudge setting up?
Try using ¼ cup of sweetened condensed milk and then adding the rest after stirring in the Baileys. This will give you a little more control over the texture. Remember that your fudge will harden the longer it sets in the fridge.
