S'more Pudding Cookies

S'mores Pudding Cookies are so incredibly soft, chewy, and they melt in your mouth! This recipe has the perfect combination of regular cookie ingredients, dry vanilla pudding mix, and milk chocolate chips!

WHAT INGREDIENTS DO YOU NEED TO MAKE S'MORES PUDDING COOKIES
You’ll be surprised to see just how basic and easy this recipe is. It uses a secret ingredient – Instant Vanilla Pudding that turns these cookies into something spectacular!
I promise you won’t be disappointed with this recipe.
Here’s what you’ll need to get started:
- butter, softened
- sugar
- brown sugar
- instant vanilla pudding, dry mix
- large eggs, lightly beaten
- vanilla extract
- honey graham crackers, finely crushed
- baking soda
- flour
- mini marshmallows
- chocolate chips, milk chocolate or semi sweet
HOW TO MAKE THESE EASY S'MORES PUDDING COOKIES
FIRST STEP: In a large mixing bowl cream butter and sugars together using a hand mixer
SECOND STEP: Add in pudding mix and beat together until combined
THIRD STEP: Beat in the eggs and vanillae extract
FOURTH STEP: In a small bowl, stir crushed graham cracker crumbs, baking soda and flour until evenly mixed
FIFTH STEP: Add the dry ingredient mixture to the wet ingredients and beat until well incorporated
SIXTH STEP: Stir in the chocolate chips and mini marshmallows until evenly mixed in
SEVENTH STEP: Roll into small balls (I used about 1 tablespoon of cookie mix per cookie) and place onto parchment lined cookie sheet about 2 inches apart.
EIGHTH STEP: Bake at 350° for 8-10 minutes. You want these cookies to be slightly under-cooked.

- 1 tsp vanilla extract
- 3 sheets honey graham crackers (finely crushed)
- 1 tsp baking soda
- 2 cups flour
- 1 cup mini marshmallows
- 1 ¼ cups chocolate chips (milk chocolate or semi sweet)
DIRECTIONS
- In a large mixing bowl cream butter and sugars together using a hand mixer
- Add in pudding mix and beat together until combined
- Beat in the eggs and vanillae extract
- In a small bowl, stir crushed graham cracker crumbs, baking soda and flour until evenly mixed
- Add the dry ingredient mixture to the wet ingredients and beat until well incorporated
- Stir in the chocolate chips and mini marshmallows until evenly mixed in
- Roll into small balls (I used about 1 tablespoon of cookie mix per cookie) and place onto parchment lined cookie sheet about 2 inches apart.
- Bake at 350° for 8-10 minutes. You want these cookies to be slightly under-cooked.

I haven't done it that way, but I think it would be about 1/4 of a cup, finely crushed.

Hi Shauna! I found your recipe by accident the other day & made them, my family LOVED them! Followed the recipe exactly with the exception of using milk chocolate chips instead of semi-sweet. I also discovered if you leave them on parchment paper a few minutes, then remove them, the marshmallows don't create such a mess removing. I highly recommend this recipe, so easy & loved by all!

1) After baking and allowing cookies to cool, try using a spatula to remove them. or 2) Place the cookies and paper on a warm damp towel with the paper side down. Let it sit for a few minutes. Leave it for a while and then peel off the cookies easily.
