- 1 can of Southwest corn
- 1 cup of mild chunky salsa
- 3 cups shredded cooked chicken breast
- 4 cups fiesta blend shredded cheese

SOUP: Cream of celery or cream of chicken soup can be used as a substitute for cream of mushroom soup.
CHEESE: Any type of shredded cheese will work in this recipe. Consider using cheddar, Monterey Jack, or a blend of cheeses.

How To Make Doritos Cheesy Chicken Casserole
FIRST STEP: Preheat the oven to 350°F. Generously spray a 9×13-inch baking dish with nonstick cooking spray. Set it aside.
SECOND STEP: Crush the bag of Doritos. Reserve 1½ cups and set them off to the side. Spread the rest in the bottom of the baking dish.

THIRD STEP: Using a medium-sized mixing bowl, whisk together the cream of chicken soup, cream of mushroom soup, and sour cream until smooth.
FOURTH STEP: In a large mixing bowl, combine the drained corn, salsa, shredded chicken breast, and 3 cups of the shredded cheese (be sure to reserve 1 cup for the topping).
Add the soup and sour cream mixture and stir until well combined.
FIFTH STEP: Evenly spread the cheesy chicken mixture over the top of the crushed chips.
SIXTH STEP: Evenly spread the reserved 1½ cups of chips over the top of the chicken mixture.
SEVENTH STEP: Evenly sprinkle the reserved 1 cup of shredded cheese over the crushed chips layer.

STEP EIGHT: Bake for 25 minutes. Serve while hot.

- 8 ounces sour cream
- 15.25 ounces southwest corn (drained)
- 1 cup mild chunky salsa
- 3 cups chicken breast (cooked and shredded)
- 4 cups fiesta blend shredded cheese (divided 3 cups and 1 cup)
DIRECTIONS
- Preheat the oven to 350°F. Generously spray a 9×13-inch baking dish with nonstick cooking spray. Set it aside.
- Crush the bag of Doritos, and pour all but 1½ cups into the bottom of the prepared baking dish.
- Using a medium-sized mixing bowl, whisk together the cream of chicken soup, cream of mushroom soup, and sour cream until smooth.
- In a large mixing bowl, combine the drained corn, salsa, shredded chicken breast, and 3 cups of shredded cheese. Add the soup and sour cream mixture and stir until well combined.

Even though I didn't have the Doritos on hand I used regular tortilla chips and I also added about 3/4 cup queso melted cheese. Oh and I used about 1/4 cup creamed corn cause I didn't have regular can of corn on hand. I boiled chicken breast tenders and cut it up to take place of the rotisserie chicken. My grandsons and all of us loved it and came back for thirds.

No milk. Whenever you see a recipe that says soup but no milk is mentioned...it always means NO milk.
This does look good, doesn't it? I'm in NE and we're having a cold snap right now. For me, the Ro-tel is too hot so I use petite diced tomatoes and salsa or pico de gallo, whatever's in the fridge, 'to taste'.
