Creamed Peas Ingredients
- Butter - I prefer salted butter in this recipe
- Flour - regular all-purpose flour
- Salt - sea salt is my go to
- Pepper - white pepper but can use ground black
- Half ‘n’ half
- Peas - frozen holds up better when cooking
- Dill - fresh or dried
Creamed peas are similar to creamed corn, but with peas. The recipe calls for frozen peas but fresh or canned peas could also be used.
If using fresh peas, they may take a bit longer to cook. When using fresh peas make sure they are tender before serving. If using canned peas you’ll need about two cups of peas that have been drained.
To create a smooth texture for the creamed peas it’s important to brown the flour before adding the cream to the pan. The finished dish can be garnished with a number of herbs including dill, basil, or mint. The herbs could also be simmered with the pea mixture.
How to Make Creamed Peas
FIRST STEP: In a 12-inch skillet over medium heat, heat butter until it just begins to brown.
SECOND STEP: Add flour, salt, and pepper to the pan and brown for 1 additional minute.
THIRD STEP: Whisk half ‘n’ half into the flour mixture until smooth.
FOURTH STEP: Add frozen peas and a teaspoon of chopped dill and heat over medium until mixture comes to a simmer and begins to thicken. Stir regularly to ensure the half ‘n’ half does not stick and burn to the bottom of the pan.
FIFTH STEP: Season with additional salt and pepper and garnish with fresh dill and butter, if desired.
Can I use fresh peas for this recipe?
