How to Make Mint Chocolate Brownies
Follow along with our pictures, step-by-step instructions, and helpful tips and tricks listed below. Let’s get started! You’ll love making this fun, tasty treat at home.
FIRST STEP: Preheat the oven as indicated on the brownie box. Line an 8×8 square baking pan with parchment paper and set it aside.
SECOND STEP: In a medium bowl, prepare the brownie batter and pour the batter into the prepared pan. Bake brownies according to the package instructions.
THIRD STEP: Cool brownies completely.
FOURTH STEP: Prepare the mint layer by beating the butter until smooth in a mixing bowl. Add the powdered sugar and beat until combined. The mixture will be dry.

FIFTH STEP: Add the mint extract, green food coloring, and one tablespoon of heavy cream.
With an electric mixer, beat until smooth and combined. Taste the frosting and adjust the tint or add additional extract if desired.
Add another tablespoon of heavy cream and beat until fluffy and smooth.

SIXTH STEP: Use an offset spatula to spread the mint buttercream in an even layer over the top of the cooled brownies.
Place in the refrigerator or freezer to firm the buttercream.
Pro Tip
The frosting is light and fluffy – chilling it before adding the ganache will help it hold up to the addition of the warm ganache. I popped the frosted brownies in the freezer for about twenty minutes before adding the ganache.

SEVENTH STEP: Heat the heavy cream in a microwave-safe bowl until steaming (do not boil).
EIGHTH STEP: Pour the hot cream over the chocolate chips.
Let sit for three to four minutes with a plate over the bowl to allow the chocolate chips to soften in the hot cream.

NINTH STEP: Whisk the melted chocolate until a smooth ganache forms.
TENTH STEP: Spread the ganache top layer over the chilled, frosted brownies.

ELEVENTH STEP: Allow the ganache to set either on the countertop for 45 to 60 minutes or in the refrigerator for about 15 minutes.
TWELFTH STEP: Lift brownies from the tray by the flaps of parchment paper. Cut into even squares and serve.
Pro Tip
If you try to cut your brownies before they are cooled enough, you won’t get clean cuts. Try to resist sampling until they are cool.

Candy says
Approximately how long do you microwave the cream to make it steam (not boil) for the ganache?
Thank you!
Amy T says
Hi Candy, since every microwave has a different power output, it's difficult to give an exact answer. A general guideline would be to start with a 45 second heat, then stir. Then, microwave in 15-20 second bursts until it steams. I find the total time is usually between 60 and 90 seconds. Happy baking!
Cindy says
Could I use 1/2 & 1/2 instead of fill heavy cream?
Shauna says
Hi Cindy,
We haven't personally tried the half and half but I think the swap should be okay! Let us know if you do the swap. Our readers would love to hear how it turned out too.
Kathy says
I love that I don’t have to make the brownies by scratch with this and can just use a brownie mix. However, this is an 8x8 recipe. Any ideas of how to make the frosting and ganache for a 9x13 pan? Would I double it?
Amy T says
Hi Kathy, we haven't tried this, but if I were going to, I'd definitely double everything. You may have to adjust your bake time on the brownies if you double them. 9x13 isn't exactly double the size of an 8x8, but most recipes do usually work out ok if you double them. Good luck experimenting.
